As grad students, P and I understand that sometimes at the end of the month money gets tight. We don’t like to admit it, but no matter how much we plan and save sometimes at the end of the month we always seem to have less than we need that final week.
Cue in “Budget friendly” but not exactly healthy recipes.
Here is our favorite Ramen recipe that we make using some leftovers.
1 packet Chicken Flavored Ramen
3 cups water
1 Cup roasted Brussel Sprout/ Onion leftovers
2 tbsp olive oil
salt and pepper (to taste)
- Boil the three cups of water in a sauce pan.
- Place olive oil in skillet. Make two sunny-side up eggs. Salt and pepper to taste.
- When water boils, dump in the noodles. Cook for 1 minute. Add the Chicken seasoning packet and the vegetable leftovers.
- Put soup in bowls. Place one egg on top.
